Grocery bill

Earlier I posted this picture and asked if any one would like to guess at how much this would cost in American dollars......I only had one brave soul try. Jessica, Jessica, Jessica......So sorry to say....but it was not $12.52 or $7.23 ...not even close. The grand total for Groceries that day was $63.oo (American dollars).

Monday

We got a call from the missionaries and they took us up on our offer. They came over while Mark and I were at work and they used the extra bathroom. They enjoyed a hot shower, used the washing machine and I made them some French toast! When we got home, I found these beautiful letters of thanks that they left for us! They are some good Elders!

Mark had talked to them and one of them said he had the shower as hot as it would go....but then, he couldn't take it and had to cool it off (I guess he's used to it the Honduras way!) The other missionary said he had no problem and took the hottest shower he could!

Being in Roatan, I have reflected on some of my blessings. Even the simple blessings of having hot running water, food, and a washing machine! We have so many conveniences here in the United States, and yet sometimes we still do not have the time to do the things that are most important. As I have spent time in Roatan and Haiti (in 1997) I find that the people are happy, they don't look to blame God, they thank Him. They are grateful for all that he has blessed them with and they work hard to serve Him. I see how hard it is to just accomplish everyday tasks like cooking and laundry and getting to work. I see them getting up early to walk to church in their best clothes (even high heels), walking in the mud from all the rain from the night before (in some cases long distances) But there is no complaining...this is life. How is that, that life can be so hard and yet they can be so happy and find the time to serve the Lord. Here in the states, there are so many conveniences, allowing more time to serve, yet I find so many distractions! I see in my children and myself sometimes that when we get more, we fall into expecting it. Thus instead of being grateful we become ungrateful....looking for more, expecting it, and in spite of the conveniences, we are distracted and unable to do the things that are most important. I am grateful for my experiences. They have helped me realize that I can do better, that the Lord has blessed me with so much, and that there is so much more I can do to serve God!

watching the fish jump

OK, we were out on the rocks watching the fish and walking in the shallow water when all of a sudden a school of fish jumped up out of the water. We had a great idea to video it for you kids...unfortunately.....the fish didn't respond the same! O well, we were thinking of you

Monday

We woke up this morning and it was over cast and rainy, a perfect day to work. I wasn't even tempted to go off and play.
These pictures are taken from the top floor of Marks building. Looking down on the main road in Coxen Hole. The rain was coming down all day with some intense moments. Luckily we we never caught in it!

This is Christian and Mark hard at work.

We worked so hard today...Marks Spanish is pretty good! The weather was pretty good and it wasn't hot while we worked. After work Mark and I changed clothes and set off to find a steak house in West Bay. It never stopped raining, we found the street that we needed to turn down but is was flooded. After trying another way, which didn't work, we went back to the flooded street. Yes....we actually drove down the flooded street in our little econo car. I can't believe we didn't get stuck! We never did find the resturant and the waves on the beach were getting worse, so we headed back to the car and drove through the water again. I took a picture and even taped us going through the last part of the flooded road!

On our way back to the hotel we decided to stop and get a pizza. You wouln't believe this, but there is a brick oven Pizza "restaurant". Here are some pictures of it. It is an outdoor Pizza oven. The story goes like this....The guy who lives across the street (an Italian) who lives here during the good seasons, wanted to have his own brick oven pizza. so he had one built and instead of keeping it all for himself he made it into a restaurant. They keep all thier toppings in tupperware on the counter and they just made the pizza right there in front of us. It cooked up pretty fast and we were on our way to go home and have pizza and a movie.
(there was a security gaurd there that was also working behind the counter de-viening shrimp, you see she is packing heat on her hip!)

It's the best Pizza on the Island!

Sunday...what to do when you miss your kids

On Sunday we went to church and met many wonderful members of the church. Many of them came right up to us and shook our hands, even if they couldn't speak to us in English. There were between 50-60 people in Sacrament meeting (many of them were kids) We sat and listened as best we could. The weather was cool and the fans were on with the windows open. It was very comfortable and the church was very nice. They had certificates that they handed out for Seminario (semenary) and for instituto (institute) I understand that they meet for seminary at 5 a.m.
We went to Sunday School and it looked like they were teaching out of the family relations book. I think they were asking "how do you know if you are really in love?' There was a lot of giggles and a lot of discussion in class. The teacher was doing such a good job, her name is Blanca. She was one of our employees until just recently. We found out on Sunday that she was offered something better and has taken a new job. It sounds like a more promising opportunity for her. The Seminary teacher Hermana (Solema) Solaya is now our new employee.
In Releif society there were about 8 sisters in there. The lesson was about Unity. I could read along the lesson in Spanish however I could not understand it. I did understand the part of when the sisters would work together and clean the clothes of all the brethren who had worked on the Temple. One sister, Clara, sat beside me and and made sure I was following along. She also spoke a bit of English. She is a web designer. She was very sweet to me. Also I met Daffney, she spoke English very well and helped me get to R.S. She also buys some of our products and sells them down buy the cruise ship.
After Church we drove around the Island.....It doesn't take long before you realize that you don't need so much time alone and you start to desire an opportunity to serve someone. I think because I miss my kids that I was needing someone to serve. So Mark and I decided to go home and make dinner and Choc. chip cookies for the Missionaries. We called them up and invited them over.

It didn't take long before I realized I didn't have a kitchen aid to help me mix up these ingredients.......I looked around and lo and behold.....I found one

My kitchen aid, mixing up the sugar, margerine and eggs
(what a guy!) We had fun making the cookies. It took forever to bake a double batch with only one baking sheet.
But I am not complaining, I was lucky enough to have one and an oven and runinng water, and.....well lets just say we are so lucky to have all that we have. I am so humbled to come down here and see how little people have and I feel so grateful for all that I have.
We made Spaghetti and sausage and Mark picked up the Missioanaries. Elder Mendoza is from Wyoming and Elder Mortensen is from Utah. They were so excited to come to our place. They couldn't believe that there were places like this on the island. They took pictures of everything! They were so excited just to see the table being set. Both of them have been out about a year and we could tell that they have been emersed in their work. It was as if they had forgotten about many of the conveniences that we have in the states.....As they took pictures of the bathroom they were wondering if we had hot water (they were just excited to know that we had running water) They took pictures of the dishwasher and TV's. They were so sweet, I was glad to have them over and especially glad we went through the trouble (if you can say that) of making the cookies. We invited them to come over during the week and shower in our extra bathroom (this place has 2 master suites). We also invited them to use our washer and dryer.
As much as they were excited to be here for a night I don't think they would trade any of it for the experiences that they are having here on thier missions. Elder Mortensen talked about all the wonderful food that he loves here on Honduras (I think he loves the Honduran food more than American food now). Elder Mendoza appreciated the "American Meal" but made sure to save room for cookies and milk. We so enjoyed our visit with them. We got to hear a little about thier missions and about their families back home. Mark and I got to share with them how we met and got married and about all our kids we miss back at home. They were our "kids" for the night so we did not feel so empty.
Thank you Elder Mendoza and Elder Mortensen. Their Mothers can be very proud of them
As for our kids back at home....
Lizzy I miss hearing you play your songs on the piano while I make dinner and watching Iron Chef while I rub your back
Sarah I miss hearing about how Pac, drama and volleyball went (sorry I had to miss so many big days this week), and rubbing your shoulders
Parker I miss giving you hot chocolate during the cold days and the warm hugs you give me at night.
Jacob I miss hearing you say...Mom,...... I love you! and having some mommy time during the day.
If I were there right now I would want to build a big fire and snuggle up and whatch a movie together! I love and miss you

Lawson Rock

More pictures of our condo. Each condo has it's own personal pool. (the water was too cold for a swim). I loved the Kitchen!

Baleadas (beans and crumble cheese or cream on a thick tortilla)

walking on the beach at our condo and looking at rocks that Parker and Jacob would like to collect.
more to come.....I love and miss you kids!

Our first day (SATURDAY)

pictures of Condo at Lawson Rock

grocery store in Coxen Hole (bottom level)

Church (sorry it's sideways)
after getting our rental car we headed out to drive around the Isand. We first drove by Marks building and around the main street. We stopped in to get a "tigo" card for our phone so that we could call the kids. We also drove by the church and the grocery store. Then we went to see our condo. Mark has never stayed here, but I am so pleased with what he chose. It is so beautiful! We walked on the beach and then we went shopping.
After shopping we went to get some dinner at a little resturants. it is called Comedor La Roca. (I will get a picture of this) you would never beleive it is a resturant, and you would never want to see what their kitchen looks like. I think half of the kitchen was outside. We bought baleadas for our first meal here. I hope to learn how to make them. I don't think I can buy the right kind of
cream in the states.

our first trip to the grocery store (I wouldn't dare buy any fresh meat or vegetables after I saw what they looked like, I couldn't even eat the frozen sausage)

leave a comment and guess how much it cost.

Second tirp to the store (we wanted to make Chocolate chip cookies)
We went to bed early and woke up early for work.
